I've been to the visitor's centre and I can tell you that there are no pedestrian tunnels under it. If you want to do some indoor mapping I'd suggest that you read up on how to do it first: osm.wiki/Simple_Indoor_Tagging

Knock yourself out. I tend to just keep whatever style of intersection is already there. From the changeset diff it looks like I was just re-aligning the existing ways and adding some turn restrictions to make the routing work.

Grassy Flat Reservoir Bushland Reserve is only the area outlined. It has different legal protection from the rest of the bush land. However, the comment still applies mtb=no would mean that there is a sign somewhere that said "no mountain bikes on this path" but still allows other bicycles to use the path.

Both methods are correct. This way around if the data consumer doesn't handle conditionally valued tags then it will default to the safer value.
