In JOSM keep the ctrl key down while mapping the adjacent building. It will not connect nodes to each other.

A remark. Most buildings are fair rectangular. sometimes covered a bit by trees. Map them as a rectangular, and folllow the rooflines including the extensions etc.
Square each building with the Q key while selected.

On this spot, nearly all buildings are connected to each other.

I am not 100 % sure, but keeping the ctr key down while you map avoid nodes to connect. (I use JOSM where this is the methode. I am no expert in iDeditor)
