I'd have mapped 509 a little more similarly to Gilcrease Expressway over Peoria Avenue, sight unseen, but having driven 509 before, yeah, I'd call that a trunk. Same with 705 north of 9th Street's ramps.

I'd split US 40/189 between motorway and trunk at UT 319, trunk south of that junction.

I think if any place would be a good way to split this, the Apache Street junction would be the spot. Tisdale Parkway was also built aspirationally, and doesn't carry much traffic (usually on par with North Peoria or Gilcrease Museum Road).

Generally speaking, though, once you get past the last junction with another major (like, gets-a-state-or-higher route relation level or meets a motorway) route, the whole feel of the highway significantly changes. Having driven Tisdale, this tends to occur at the northwest corner of the Inner Dispersal Loop.
