So in Coláiste Choilm, the main school buildings are tagged building=school. The little gazebo is tagged amenity=shelter and building=yes and shelter_type=gazebo. If there was a typical school 'shed', it would also be tagged amenity=shelter and building=yes NOT building=school. A caretaker's shed would be building=shed.

There is a building named Sportlann that is tagged leisure=sports_centre. This might not be quite correct. This would be OK if it was something like a club / community sport centre (typically with multiple facilities / sport spaces), but might be incorrect if it is just a school sports hall.

With Cork University Hospital the whole site is amenity=hospital and healthcare=hospital and the buildings are building=hospital. A confounding factor may be Cork University Maternity Hospital - is that a separate hospital or not?

Sometimes, especially with commuter towns, there are several schools co-located on one site, e.g. osm.org/#map=18/53.51117/-6.41369 in which case we can either split it as best we can with separate amenity=school or use landuse=education

So it goes on a node, not a way. It is only really needed on the end-of-highway node when that node is adjacent to another highway.
