Basically you create a polygon (area) around the building and another around the parking lot. Then select both areas, right click, select the + to create a multipolygon. Can you look at the street crossings? they should be tagged as highway=footway + footway=crossing. There are additional tags for marked crossings. Let me know if you have any questions or would like to be more involved mapping pedestrian ways.
