Wenn die Wege keinen Namen haben, dann sollte name=* nicht verwendet werden, siehe auch osm.wiki/Names#Name_is_the_name_only

Wenn eine Anwendung die Daten in OSM nicht auf eine in deinen Augen angemessene Weise verarbeitet wende dich bitte an die Entwickler der Anwendung. Hier müsstest du also die Entwickler von Komoot dazu bringen, das access=no besser sichtbar zu machen. OSM ist eine Faktensammlung. Darauf müssen sich alle Datennutzer verlassen können. Den Fakt "dieses Objekt darf nicht betreten/befahren werden" erfassen wir gemäß wiki mit access=no und nicht mit name="gesperrter Weg" oder ähnlichem.

Das entfernen von highway=path ohne den rest anzupassen ist keine gute Idee. Die dann noch verbleibenden Tags ergeben alleinstehend keinen Sinn. So könnte der nächste, der da vorbei kommt, das einfach wieder ergänzen. Existieren die Wege denn wirklich nicht mehr? Also wenn ich da vor Ort durch den Wald gehe (unabhängig davon, ob ich es darf oder nicht), kann ich dann wirklich keinen Weg erkennen? Nicht mal einen Trampelpfad?

du hast hier ein paar verdächtige Namen benutzt. Ich bezweifle, dass die wege "gesperrter Weg" oder ähnliches heißen. Teilweise hast du auch das highway=path entfernt.
Was für Wege sind das? Existieren die real vor ort? Haben sie einen Namen? Das die Wege nicht passiert werden dürfen kannst du mit access=no erfassen.

du hast hier ein Schild mit dem Namen "Gesperrte Ruhezone" erfasst. Ich halte es für unwahrscheinlich, das das Schild wirklich so heißt. Wäre hier inscription=* vielleicht passender?
