Dieses Tag wird in OSM nur dreimal verwendet und sieht für mich wie ein Tippfehler aus. Für mich scheint building=farm_auxiliary passender.
farm_auxiliary sollte mehr mit landuse=farm_auxiliary verwendet werden und den ganzen Bauernhof umfassen.

I understand your motivation and for the moment no better idea how to map it as is was. I don't care so much if this tag is changed. It is only important for me to understand it and to enable other mappers to understand it as well.
It looks to me as if this building is used as a hostel again (https://brettonhostel.co.uk/).
So we could remove the building:use=residential and add the website. Maybe we change the note to "This building was build by Youth Hostel Association but is now operated by another operator."
