Also, most of the roads in the winery should probably be either service=parking_aisle or no service tag, service=driveway should only be for the ones leading up to one specific property/building, as per service=driveway

Hey, it's probably best to use a lifestyle prefix to mark as disused, you'd be setting disused:highway=path and removing highway=path. If there's no access signs, probably worth adding an access=no tag too!
